Campfire Recipe – Eggy Chilli Crumpets


Campfire Eggy Chilli Crumpets

This is a really simple, one pan recipe that makes an awesome breakfast.  Thanks to Rich and Sal (our regular camping buddies) for showing us this one!

Ingredients:

4 x Eggs
4 x Crumpets
2 x Red Chillies
Salt
Pepper
Oil or Butter to fry with


Mix the Egg and Chilli together in a bowl or pan

Directions:

  • Chop your chillies into small pieces.  It is a good idea to take a pair of latex gloves camping for this sort of thing!
  • Put the eggs is a bowl that will be large enough to drop the crumpets into, then mix with a fork.
  • Add the chillies to the eggs.
  • Place the crumpets in the egg mixture.  I find it helps to keep them in there for 5 – 10 minutes so that the crumpets soak up some of the egg mixture.
  • Add a little salt and pepper to taste
  • Fry in a pan until golden brown and cooked right through.

Serve with a dash of tomato ketchup on the side, and if you have any lying around, some crispy streaky bacon goes with it a treat!
